This position is responsible for managing the kitchen and meals in their entirety. Menu planning is not the chef's responsibility.
Breakfast, lunch and dinner for up to 20 in the dining room and up to 8 staff each day. Our hotel is remote – access to other islands is
limited. Approximately 8 other staff members reside onsite in the staff dormitory. Our boat goes to town twice weekly for supplies, etc.
Because we are in a remote location and our staff is housed on the premises, the environment is very much like being on a ship. It is vital
that our chef is secure, friendly and teamwork oriented. It is key that our employees get along with others well, both guests and staff.
We need an individual who is healthy and highly dependable. English is not necessary. We prefer a Panamanian for this position.
This position calls for an individual who is professional and presentable. The chef position is a difficult yet challenging one.
Split shifts combined with the limited vacation schedule require a self-starter who is dedicated and remains focused on the job.
Because of our remote location, it is very difficult to replace any of our crew. We do expect a commitment from our employees to stay at
least a year. It is important that our applicants understand the operation and what responsibilities will be required of them.
Under normal circumstances, our staff works a six or seven day week for five weeks with a week off at the end of the five week period.
This schedule is dependent upon guest reservations. It is possible during high season that the leave week be delayed due to guests on site.

The restaurant is open during the works, finishing date of the
construction is end of Oct, so we are prepared for the new high season
that starts in Nov.
Our kitchen is nothing fancy (gas oven and 6 flames hearth, freezer,
fridge, microwave, juicer…), but has served us well for the last year.
Keep in mind, that panama still is mostly a3rd world country. The next
bigger town is 100 km away, so you have to be able to work with
sometimes limited resources and be able to plan your meals.
We will need the new chef (or perhaps a couple) latest mid of Oct.
We offer you free room (with a/c, fan, bathroom with hot water) and
board, plus a 20% commission on every sold meal.
On good days we sell around 30-35 meals a day at an average price of
6.5 $. Just as an information, the minimum salary is 83 cts an hour in
Panama.
For sure you wont get rich here, but you will be able to earn like 4
times more than standard workers and definitely a lot more than we do
;). You will have nearly no costs of living, just your drinks and any
personal stuff.
There will always be one helper in the kitchen, we will be in charge
of the service.
You have to be willing to live pretty far away from any civilisation
(no nightlife, just nature), but on a very beautiful spot with a nice
team and nice guests. Unfortunately we can´t offer you any visas or
official papers, you gonna have tourist status and will have to leave
every 3 months for three days to costa rica (or the states or
wherever).
We are pretty flexible with everything, we always find solutions for
any problems and we are open for any of your ideas or proposals.
We are right on the beach, only 10 min to world famous (for diving and
surfing) Santa Catalina.
Our high season is till end of April, this would be the minimum time,
if you like it and want to stay longer- we for sure could find a
solution for that.

The Adelante Hotel & Restaurant is situated at central of pacific Costa Rica (500 meters from the beach so you
can hear the waves when you go to bed). It is a hip hotel which is all done and designed by the owners and has
12 rooms and the restaurant fits 9 tables plus a bar. Also our goal is not just to offer bed and food – we want
to entertain the customer for the whole stay! The restaurant has been open since December `08 so we are still
building our client base. The staff who are working here are all young people from Estonia. Every evening we hang out
and play games, spin music, jam with instruments, have movie nights or go to different parties around Uvita
and Dominical, and of course we try our surfing skills in the ocean, which is nearby. So you can say we are all
one big family here in Adelante!
The menu we offer is intercontinental ranging from Mexican to Indian food and not too big. Kitchen itself is a small
one but has everything what a chef needs (even a microwave which is only used for storing spices!). Also we have people
who supply us with fresh farmer grown vegetables and herbs (we grow our own parsley, basil, oregano, mint, lemongrass,
cilantro…) and a weekly supply of meat, fish, chicken, spices and also everything else we want.
We are looking for a chef who wants to escape the big cities and come down here to try the Costa Rican way of life
- Pura Vida! The pace here is much more relaxed than in the west. Excellent candidate should have professional
cooking skills but not only that. The chef should be able to run and manage the kitchen, set the menu, plus guide
the staff who are working in there. Main thing we are looking for is the ability to think one step ahead and be
open minded. The chef should also have a good sense of humor and take it easy! The staff we have right now have

The Position
The Mexican Chef will be responsible for setting up and developing the Mexican kitchen operation in this new 100 seat outlet. 2.Demonstrate ability to stay abreast of current and future food trends including health and product issues.
3.Working knowledge of Word & Excel
4.Minimum 3 years experience working in a 5 Star hotel or restaurant as a Sous Chef. 6 Years kitchen experience in total.
5.Experience in managing food cost on a strict basis.
